The Truffle

A Truffle’s vademecum

What is it?

Truffle is a subterranean mushroom that lives in symbiosis with the roots of certain trees, such as wild poplar, hazel tree, oak, linden.
By means of these plants, it is enriched with valuable substances such as water (no less than 70%) and minerals, and it takes its shape and colour according to the conformation of the ground: considering the white truffle, the former is more or less spherical according to the hardness of the earth, the latter is more yellowish in case of tuff soils.

How can it be harvested?

The harvest is regulated by a specific regional calendar, and truffle hunters must be in possession of a specific card. Experienced truffle hunters know the area, and ride along the paths of the forests, especially at night or in the early hours of the morning, away from prying eyes, with their trustworthy dogs, that can sniff out the odour of mature truffles, which are immediately extracted using extreme care not to damage it, with the help of a little spade.

Why is it rare?

Truffles are very rare and sought-after fruits, because any harm to the environment and pollution do not allow truffles to rise, therefore, in the course of years, the harvest areas have been more and more reduced, and the yield is limited.

How much is it?

The price of the truffle can even change from day to day, depending on the species, the size, the availability and the market, therefore it is not possible to determine a generic quote if not based on a specific request.

How can it be preserved?

The truffle is a highly perishable product and should be consumed as soon as possible, so as to best enjoy the aroma that it emanates.
A few little tricks, however, allow the preservation of fresh truffles for up to one week, so:
- Do not wash truffles until you are ready to use them;
- Wrap each truffle in a cloth or a paper towel (which will have to be changed every day) in a tightly closed glass jar.
Preserve in your refrigerator.

How should it be consumed?

At the moment of consuming it, gently wipe the truffle under cold water using a brush to remove any remaining mould.
The white truffle is best served sliced into very thin slices (preferably with a slicer), raw on both cold and hot dishes. Tasty on noodles and rice, it is excellent on fried eggs!

How is it sold?

After being purchased directly from the truffle hunters, truffles are carefully selected, brushed, checked one by one and divided according to their quality and size; at this stage, they are ready to be sold directly in our store, or to be delivered to Italy and all the major European cities, with delivery within twenty-four hours.
